Have you ever been in a wedding reception where you JUST KNOW what would be served at Item no 7 and most often than not you are right! The most fascinating thing is that there are loads of simple food recipe that we can try and really make our party, get -together or wedding carry that continental look without rolling the cash. So I have decided to start a food journey and believe me when I say am not the most confident person in the kitchen! But as the saying goes.. If you do not try, then you’ll never know.
So here goes… my very first Tortilla Chicken Wraps.. This portion can serve 2 or more people if cut in mini sizes
Ingredients:
1 large tortilla wrap
2 teaspoons mayonnaise
Small handful of crunchy lettuce( you can even use spinach)
Roast pork, chicken or beef, shredded
1 small, ripe avocado
Lime juice
One Large Tomato, Green and Red Sweet Peppers
Black or Grounded dry pepper( optional)
Onions.
How To:
In no particular order:
1, I prepared my tortilla ready as instructed in the pack.
2, Cut my ripe( not overripe) avocado into squares and put in a bowl.
3, Slice the tomatoes and removed the watery seed bits-add in the same bowl
4, Slice the Onions,Green and Red Sweet Peppers( whatever shape you like) I like mine in strips- add in bowl
5, Take one or two large leafy and crunchy lettuce and slice in half. you can slice in small pieces but I like mine just in half..:)
I lay the tortilla wrap on a clean flat surface.Then spread the mayonnaise all over it.I, then arrange the lettuce in the middle of the wrap just away from the edge of the wrap.I throw in the mix of chicken,tomatoes, avocado, sweet peppers and onions, then sprinkle just a tiny bit of black or grounded hot pepper ( I like it hot) Squeeze in just a tiny bit of lemon juice. I try to keep the fillings away from the edge of the wraps as much as possible.( If you don’t, you will know why when you wrap it!) It would spill!
I carefully fold the wrap and push any stray fillings in until it looks well wrapped. Try to avoid a heavy filling as that could make it difficult to fold without spilling. If you like you can fold one edge of the wrap.
There’s nothing stopping you to create your own fillings..Although this picture is not mine. I achieved something very close to this.
I cut in two and stick a tooth pick right in the middle. On my plate, I serve with sliced cucumbers and olives..
This can be used as an appetizer for your wedding or for a gathering!
